02 Ingredients
4 Large Bell Peppers (any color, tops cut off and seeds removed)
500g Ground Beef
1 cup Cooked Rice
1 Onion (chopped)
2 cloves Garlic (minced)
1 can (400g) Diced Tomatoes
1 cup Shredded Cheese (Mozzarella or Cheddar)
2 tbsp Tomato Paste
1 tsp Italian Herbs (Oregano/Basil)
Salt (to taste)
Black Pepper (to taste)
2 tbsp Olive Oil
03 Method
Step 1
Preheat oven to 190°C (375°F). Prepare bell peppers by cutting off tops and removing seeds.
Step 2
Heat Olive Oil in a skillet. Add Onion and Garlic, cook until softened.
Step 3
Add Ground Beef and cook until browned. Stir in Diced Tomatoes, Tomato Paste, Cooked Rice, and Italian Herbs. Season with Salt and Black Pepper. Simmer for 5 minutes.
Step 4
Stuff each bell pepper with the beef and rice mixture. Place upright in a baking dish.
Step 5
Top with Shredded Cheese.
Step 6
Cover with foil and bake for 30 minutes. Remove foil and bake an additional 10 minutes until cheese is melted and peppers are tender.
Step 7
Serve hot as a complete meal.
