2 Carrots (sliced)
1 cup Broccoli Florets
1 cup Cauliflower Florets
1 Sweet Potato (cubed)
1 Red Bell Pepper (sliced)
3 tbsp Olive Oil
1 tsp Dried Italian Herbs (or Rosemary/Thyme)
Salt (to taste)
Black Pepper (to taste)
Optional 1 tbsp Balsamic Vinegar (for extra flavor)

Step 1
Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
Step 2
Place Carrots, Broccoli, Cauliflower, Sweet Potato, and Bell Pepper in a large bowl.

Drizzle with Olive Oil, add Herbs, Salt, and Black Pepper. Toss until evenly coated.
