02 Ingredients
2 Carrots (sliced)
1 cup Broccoli Florets
1 cup Cauliflower Florets
1 Sweet Potato (cubed)
1 Red Bell Pepper (sliced)
3 tbsp Olive Oil
1 tsp Dried Italian Herbs (or Rosemary/Thyme)
Salt (to taste)
Black Pepper (to taste)
Optional 1 tbsp Balsamic Vinegar (for extra flavor)
03 Method
Step 1
Blanch Spinach in boiling water for 1–2 minutes until wilted. Drain and squeeze out excess water. Chop roughly.
Step 2
In a skillet, melt Butter over medium heat. Add Onion (if using) and Garlic, sauté until fragrant.
Step 3
Stir in Heavy Cream and bring to a gentle simmer.
Step 4
Add Spinach and Parmesan (or Cream Cheese). Stir until creamy and heated through.
Step 5
Season with Salt, Black Pepper, and a pinch of Nutmeg if desired.
Step 6
Serve warm as a side dish, especially with steak or roasted meats.
